Recipe: Banana Split Bars

Last year, when my friend Anna was celebrating her birthday, she requested banana split bars instead of a birthday cake. It was such a fun dessert, and when I asked for the recipe, I learned that it was also super easy to make. These banana split bars involve a lot of layering, and you can save even more time by using store-bought hot fudge. I’ll include a hot fudge recipe in case you want to make your own. You can also use any flavor of ice cream you’d like – we used half vanilla and half strawberry this time. Mint chocolate chip is another variant that skips the bananas and uses chocolate graham crackers. It’s a very customizable recipe that would be perfect for a birthday party, a picnic, or any other time you’d like a simple sweet treat. //



  • 2 cups graham cracker crumbs
  • 48 fl oz ice cream
  • 1 jar hot fudge topping
  • 1 container of Cool Whip
  • 4 bananas, sliced


  • Maraschino cheeries
  • sprinkles



  1.  Before assembling dessert, take ice cream and Cool Whip out of the freezer.
  2.  Spread crushed graham crackers into an even layer in a 9 x 13 pan.
  3.  Add sliced bananas on top of graham crackers in another even layer.
  4.  Remove ice cream from the container and cut into 1-inch slices. Lay the slices in another even layer on top of the bananas. Leaving the ice cream out for a few minutes before cutting can help you spread the ice cream and smooth out any gaps.
  5.  Place pan into freezer for about an hour, until the ice cream is firm.
  6. Add hot fudge topping and spread evenly, then add Cool Whip.
  7. Before serving, cut into squares and top each with a maraschino cherry and sprinkles if desired.

If you want to make your own hot fudge topping, follow the recipe below:

Hot Fudge Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup butter
  • 2 cups powdered suger
  • 1 1/2 cup evaporated milk
  • 1 tsp vanilla extract



Combine all ingredients in a pot and cook over medium heat until thick and smooth, stirring constantly. Remove from hear and then add vanilla, then let cool.
