Now that we are well into the summer months, outdoor activities have been at the front of my mind. I knew that I wanted to do something that would be good for a picnic, and I had a hard time narrowing things down. Instead of choosing just one recipe, though, why not try three?

Egg salad is a potluck staple. This version of the classic dish is packed with flavor, and it is also a little bit chunkier than some other recipes I have seen. The texture of this egg salad was perfect as a sandwich.

This watermelon cucumber salad recipe may seem a bit adventurous at first, but you should definitely give it a try! It doesn’t take long at all to assemble, and if you decide to serve it in the watermelon rind, it’ll be an eye catching addition to any event you bring it to. The balsamic vinegar brings out the sweetness of the watermelon and adds a savory kick to the cucumber, and the feta cheese does a great job of bringing all of the flavors together.

Finally, a tropical fizz is a fun drink that can be customized many different ways. This version uses strawberry, kiwi, and pineapple as garnishes, but feel free to mix things up if you have a different favorite fruit. It’s a fun way to spruce up a regular fruit punch.

Egg Salad

Egg Salad

Prep Time 30 minutes
Servings 4

Ingredients
  

  • 6 large eggs
  • ¼ cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tsp lemon juice
  • ¼ tsp salt
  • Ground pepper to taste
  • ¼ c red onion diced
  • 1 tbsp chives chopped
  • 1 tbsp dill chopped

Instructions
 

  • Hard boil the eggs, then peel and chop them.
  • Whisk together mayonnaise, mustard, lemon juice, salt and pepper in a medium bowl.
  • Mix in the onions and fold in the eggs, chives, and dill.
  • Cover and chill in the refrigerator for 20 minutes. Serve as is or on bread for an egg salad sandwich.

 

Watermeloncucumbersalad

Watermelon Cucumber Salad

Prep Time 30 minutes
Course Appetizer, Lunch

Ingredients
  

  • ½ large watermelon sliced
  • 1 cucumber diced
  • 1 red onion chopped,
  • c balsamic vinegar
  • Feta cheese to taste
  • Salt to taste

Instructions
 

  • Cut the watermelon in half lengthwise.
  • Dice half of the watermelon and save the rind for later if you would like to use it as a serving dish.
  • Place watermelon, cucumber, red onion, salt, and balsamic vinegar into a large bowl and mix.
  • When ready to serve, add desired amount of feta cheese.

Tropical Fizz

Ingredients
  

  • Strawberries
  • Kiwi
  • Pineapple rings
  • Sparkling apple juice
  • Tropical fruit juice
  • Soda water

Instructions
 

  • This recipe isn’t an exact one – it will depend on how many servings you would like to make. The tropical fruit juice can also be any one of your choice. There is a lot of customization that can go into this recipe, so experiment with different juices and fruits to find a combination that works best for you.
  • Mix one part sparkling apple juice, one part tropical fruit juice, and one part soda water into a large pitcher. This recipe works best if you refrigerate the drink until right before serving.
  • Cut strawberries, kiwi, and pineapple rings into small pieces and fill each cup with equal amounts of fruit.
  • Pour juice mixture into each cup and serve.
