Recipe: Groundhog’s Day Treats

As we enter January, the bulk of the holiday season has concluded. It takes a lot of work to make sure that the holidays are special, and it’s easy to miss that magic once it’s gone. Thanksgiving, Christmas, and New Year’s aren’t the only holidays, of course, but once we’ve celebrated those titans, the cool-down period hits a little hard.

Once you’ve left your elementary school, it feels like Groundhog Day quite literally gets overshadowed by every other holiday. I don’t know about you, but I think that Punxsutawney Phil might feel more inclined to ignore his shadow if we give his holiday the recognition it deserves. These two desserts are super simple to make and are perfect for children and adults alike. Hopefully by the time you read this recipe you’ll be smiling in the sunshine and not throwing on another layer.

Groundhog Faces

Course: Dessert

Materials

  • Cupcakes
  • White frosting
  • Oreos
  • Brown M&M’s candies
  • Assorted sprinkles
  • Green food coloring

Instructions

  • Make your favorite cupcakes according to the recipe. While waiting for the cupcakes to cool, mix a couple drops of green food coloring into white frosting. Frost each cupcake.
  • Place a few Oreos into a sandwich bag and crush them with the back of a spoon. Take the crushed Oreos and sprinkle them on top of each cupcake.
  • Take a whole Oreo and use extra frosting to attach two brown M&M’s candies to create each groundhog’s mouth. Use two white sprinkles to create the teeth, and use colorful sprinkles to create the eyes. Attach two more M&M’s to the back of each Oreo to create the ears.
  • Place the assembled Oreo on top of a frosted cupcake.

 

Shadow Cupcakes

Materials

  • Cupcakes
  • White frosting
  • Teddy Grahams
  • Green food coloring

Instructions

  • Make your favorite cupcakes according to the recipe. While waiting for the cupcakes to cool, mix a couple drops of green food coloring into white frosting. Frost each cupcake.
  • Place two Teddy Graham crackers into each cupcake, side by side. Then place one more Teddy Graham face-down in the frosting in front of one of the standing cookies.
