AFTER WRITING THE STORY ABOUT the fascinating history of Midwest salads on page 52, I thought that it’d be fitting to include a few recipes for you to try. These two are some of my personal favorites, and I’ve been making them for events, holidays, and even as an easy meal prep for quite some time. When it was time to take some photos, I thought that the most fitting place to do so would be at a nice little hangout with some friends. After all, Midwest salads are meant to be shared!
As we paused our game (Dungeons and Dragons, for those curious) to eat, I wandered around with my camera and tried to stage the perfect picture. We had some great conversation – a stark contrast to the combat scenes we had been describing just moments before – and filled our plates. I felt incredibly lucky that I had such great people in my life to share a meal with.
I think that might be another reason why these salads are so important. Potlucks are great opportunities for us to gather with the people that matter to us, and what’s a potluck without a lettuce-free salad?
Italian Pasta Salad
Ingredients
- 12 oz rotini pasta
- 1 red bell pepper
- 8 oz salami, chopped
- 1 cucumber
- 1/2 of a red onion
- 1/2 black olives, sliced
- 16 oz Italian dressing
- Shredded Parmesan cheese, to taste
Instructions
- 1. While the rotini is boiling, dice the bell pepper, salami, cucumber, and red onion.2. Allow pasta to cool. Add all ingredients into a large bowl and mix well with the Italian dressing.3. Top with Parmesan cheese and serve.
Snickers Apple Salad
Ingredients
- 3.4 oz vanilla pudding
- 3/4 cup milk
- 8 oz Cool Whip
- 4 Granny Smith apples
- 6 full-sized Snickers bars
- Caramel sauce, to taste
Instructions
- 1. In a large bowl, whisk together the vanilla pudding mix and milk until smooth and creamy. Fold in the Cool Whip.2. Core and chop the apples. If you are making this in advance, toss the apples with lemon juice to prevent browning.3. Chop the Snickers into small pieces. Set aside a small portion to use as a garnish.4. Fold in the apples and Snickers. Cover and refrigerate until ready to serve.5. Top the salad with Snickers and caramel sauce if desired.
